This quick avocado toast is a balanced breakfast and one of my favorites when I don’t have much time. It even makes a great snack! Just combine a few ingredients and add everything on top of your favorite bread and you’re good to go.
A lot of avocado toast recipes include a hard-boiled egg. If you are looking for that, try my Smashed Avocado Toast. This one is made without eggs for something a little different! If you have ripe tomatoes, try my Avocado Tomato Toast with fresh basil!
If you’re looking for more high protein breakfast options, make my Easy Breakfast Bowl with Eggs & Avocado, Cottage Cheese Egg Bake or Kale and Mushroom Egg Bites. And if you have leftover sourdough bread after making this Avocado Cottage Cheese toast, use it to make Sourdough Croutons!
Key Ingredient Notes and Substitutions
This Cottage Cheese Avocado Toast recipe is made with a handful of ingredients. Here’s some ingredient notes, but be sure to check the printable recipe card for the complete list of ingredients.
- Fresh Avocado – use a perfectly ripe avocado for best results. According to the Hass Avocado Board, you can tell if your avocado is ripe if it yields to gentle pressure. It shouldn’t be mushy, but not hard either! So give it a gentle squeeze and if it feels lightly soft, it’s ready to use. Good avocados are key to making the even the best plain avocado toast recipe.
- Cottage Cheese – cottage cheese is a good source of protein and also adds some calcium and extra flavor to this recipe. It makes for a delicious avocado toast! I like the texture and consistency of Good Culture brand of cottage cheese if you can find it. If you don’t like the flavor or texture of cottage cheese, feel free to substitute it with Greek yogurt.
- Sourdough Bread – in my opinion, sourdough is the best bread for this recipe because it’s a sturdy bread but has a delightful chewy texture when you bite into it. You can use whole grain bread, wheat bread, rye bread, or even white bread instead. Just make sure that you use a good bread – it’s a key to up-leveling any avocado or cottage cheese toast.
- Lemon Juice – a little squeeze of lemon juice adds citric acid which helps brighten the flavor and color of the avocado to give it that beautiful bright green hue. It also adds some vitamin C! If you prefer, substitute with lime juice instead.
- Dijon Mustard – a little bit of dijon is my favorite way to add some tang and spice to this avocado mixture! Feel free to leave it out if you want.
- Everything But the Bagel Seasoning – I use Everything But the Bagel Seasoning from Trader Joe’s, but you can use any Everything Bagel seasoning or even make your own. If you aren’t familiar with it, it’s a combination of toasted sesame seeds, poppy seeds, garlic and onion flakes, and salt. Add black pepper too if you want.
- Honey or Hot Honey – this is optional for topping! Feel free to use your own favorite toppings instead. I’ve seen people use balsamic, sriracha, chili crunch, or a pinch of red pepper flakes.
