Ingredients
  

  • 1/2 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup almond flour or bread crumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray for baking

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  • Combine cottage cheese, shredded mozzarella, grated Parmesan, egg, almond flour (or bread crumbs), garlic powder, Italian seasoning, salt, and pepper in a large mixing bowl. Mix thoroughly until all ingredients are fully incorporated.
  • Let the mixture rest for about 5 minutes.
  • Scoop about 1½ tablespoons of the mixture and roll between your palms to form small balls, placing each one on the prepared baking sheet.
  • Lightly spray the cheese bites with olive oil.
  • Bake for 18-20 minutes until the bites are golden brown on the outside.
  • Allow the bites to cool for 3-5 minutes before serving.

  • Cold hands help prevent sticking when forming the bites.
