Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
Combine cottage cheese, shredded mozzarella, grated Parmesan, egg, almond flour (or bread crumbs), garlic powder, Italian seasoning, salt, and pepper in a large mixing bowl. Mix thoroughly until all ingredients are fully incorporated.
Let the mixture rest for about 5 minutes.
Scoop about 1½ tablespoons of the mixture and roll between your palms to form small balls, placing each one on the prepared baking sheet.
Lightly spray the cheese bites with olive oil.
Bake for 18-20 minutes until the bites are golden brown on the outside.
Allow the bites to cool for 3-5 minutes before serving.
