Strawberry Cake Truffles | Simple & Sweet Valentine Treat

A creamy, pink, and giftable Valentine’s dessert made from strawberry cake mix, cream cheese, and smooth vanilla coating. These bite-sized truffles are easy to make, perfectly sweet, and great for gifting or snacking.

Ingredients
  

  • 15.25 oz strawberry cake mix (e.g. Betty Crocker)
  • 8 oz block cream cheese, softened
  • ⅓ cup cream cheese chips, roughly chopped
  • 2 bags (10 oz each) Ghirardelli vanilla melting wafers
  • ½ cup Wilton pink candy melts
  • ½ cup Wilton bright pink candy melts
  • Sprinkles (optional)

Instructions
 

  • 1. Preheat oven to 350°F. Spread cake mix on a parchment-lined baking sheet and bake for 5 minutes to heat-treat. Cool completely.
  • 2. In a bowl, beat cream cheese until smooth. Mix in cooled cake mix until dough forms.
  • 3. Stir in cream cheese chips. Cover and chill dough for 2 hours.
  • 4. Scoop into 1½ tablespoon portions, roll into balls, and rest at room temperature for 15 minutes.
  • 5. Melt vanilla wafers using a double boiler or microwave until smooth.
  • 6. Dip each ball into melted coating, tap off excess, and place on parchment.
  • 7. Top half with sprinkles before coating dries.
  • 8. Melt pink and bright pink candy melts separately, drizzle over truffles, and let set before serving.

Notes

  • Makes about 20 truffles.
  • Store in an airtight container in the fridge for up to 5 days.
  • Chilling the dough helps with rolling.
  • Resting before dipping prevents cracking.
  • Microwave method: Heat-treat cake mix for 3 minutes, stirring every 30 seconds.
