Ingredients
  

  • 4 eggs
  • 1 cup of sugar (or 150-200g depending on your preference)
  • 500 g of mascarpone cheese
  • 350 g of ladyfingers depending on the size of the dish
  • 1.5 cups of brewed espresso or instant coffee
  • Unsweetened cocoa powder for dusting

Instructions
 

  • Crack an egg and divide the egg white into one bowl and the yolk into another. Set the egg whites aside. Repeat this step with the remaining eggs.
  • Add sugar to the yolks and whisk on medium speed for 3-5 minutes, or until the mixture is light, thick, and frothy.
  • Add mascarpone cheese to the yolk mixture and whisk for 2-3 minutes until fully combined. Set aside.
  • Whisk the egg whites until stiff peaks form.
  • Gently fold a quarter of the whisked egg whites into the yolk mixture. Continue folding in the remaining egg whites gradually. Set the filling aside.
  • Pour brewed coffee onto a plate. Dip each ladyfinger into the coffee for 1-2 seconds.
  • Arrange the coffee-soaked ladyfingers in a dish. Spread half of the creamy filling over the ladyfingers and smooth it out. Repeat with another layer of soaked ladyfingers and the remaining filling.
  • Cover the dish with plastic wrap and refrigerate overnight or for at least 6 hours.
  • Dust the tiramisu with cocoa powder before serving.

Notes

    • Egg Yolks: Whip egg yolks with sugar until they reach a thick, frothy consistency, ensuring the perfect texture for your creamy filling.
    • Refrigerate: Chill the tiramisu in the fridge for several hours or overnight. This deepens the coffee flavor and enhances the overall taste.
    • Ladyfingers: Dip the ladyfingers briefly into coffee, no longer than 1-2 seconds. This prevents them from becoming too soft or falling apart.
    • Add-Ins: For extra flavor, mix 2-3 tablespoons of Marsala into the brewed coffee before dipping the ladyfingers.
  • Decorate: Dust a thick layer of unsweetened cocoa powder on top for a classic finish. Alternatively, use a circular piping bag to add decorative dollops.
